Journey

1. Early harvest in the groves

   Green-to-purple Koroneiki olives are combed onto nets in late October and early November.

2. Cold extraction at our mill

   Olives are washed, crushed and malaxed below 27 °C within six hours of picking.

3. Laboratory analysis

   Each tank is tested for acidity, peroxide value and polyphenols before bottling.

4. Bottling in Kalamata

   Filtered and bottled under nitrogen in dark glass and tins.
